Zucchini Frittata

Ingredients
  • 6 egg whites
  • 2 whole Omega-3 eggs
  • 2 cups zucchini, diced
  • 1 small Vidalia onion, chopped
  • ¼ cup parsley, chopped
  • 1 garlic clove, pressed
  • 1 Tbs. coconut oil
Instructions
  1. In a large bowl, combine all ingredients (except oil) and mix well. Heat oil in a large skillet over medium-high. Add egg mixture and cook until golden brown on bottom. Then flip and cook other side until golden.
  2. Cut into wedges before serving.
