Pear and Toasted Walnut Salad

Ingredients
- 6 cups baby arugula leaves
- 2 pears, thinly sliced
- 1 ½ Tbs. shallots, minced
- ¼ cup walnuts, chopped and toasted
- 2 Tbs. extra virgin olive oil
- 2 Tbs. white wine vinegar
- ¼ tsp. Dijon mustard
- ¼ tsp. black pepper
Instructions
- In a large bowl, combine shallots, olive oil, vinegar, mustard, and black pepper.
- Stir with a whisk.
- Add arugula and pears to bowl and coat well.
- Serve mixture to 4 plates. Spring each serving with 1 Tbs. walnuts. Enjoy!
