Pear and Toasted Walnut Salad

Ingredients
  • 6 cups baby arugula leaves
  • 2 pears, thinly sliced
  • 1 ½ Tbs. shallots, minced
  • ¼ cup walnuts, chopped and toasted
  • 2 Tbs. extra virgin olive oil
  • 2 Tbs. white wine vinegar
  • ¼ tsp. Dijon mustard
  • ¼ tsp. black pepper
Instructions
  1. In a large bowl, combine shallots, olive oil, vinegar, mustard, and black pepper.
  2. Stir with a whisk.
  3. Add arugula and pears to bowl and coat well.
  4. Serve mixture to 4 plates. Spring each serving with 1 Tbs. walnuts. Enjoy!
