Lemon Roasted Peppers

Ingredients
  • 2 red bell peppers, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 2 green bell peppers, sliced
  • 5 small sweet peppers (any color), chopped
  • 1 lemon, juiced
  • ½ tsp. coconut oil
  • sea salt and pepper to taste
Instructions
  1. Coat peppers with coconut oil, and broil for 2-3 minutes or until skin is browned.
  2. Drizzle lemon juice and sprinkle sea salt and black pepper over vegetables before serving. Enjoy!
