Ingredients
- 2 large cucumbers, peeled & thinly sliced
- 1 pint cherry or grape tomatoes, halved
- ½ medium sweet onion, sliced
- 2 Tbs. fresh parsley, chopped (or 1 Tbs. dried)
- 1 Tbs. apple cider vinegar
- 1 Tbs. extra virgin olive oil
- sea salt and black pepper to taste
Instructions
- Mix all ingredients.
- Chill before serving, or let stand for at least 10 minutes.
