  • 2 large cucumbers, peeled & thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • ½ medium sweet onion, sliced
  • 2 Tbs. fresh parsley, chopped (or 1 Tbs. dried)
  • 1 Tbs. apple cider vinegar
  • 1 Tbs. extra virgin olive oil
  • sea salt and black pepper to taste
  1. Mix all ingredients.
  2. Chill before serving, or let stand for at least 10 minutes.
