Crockpot Salsa Chicken
Crockpot Salsa Chicken Servings: 4
  • 4 4-oz. chicken breasts, skinless and boneless
  • 4 large tomatoes, diced
  • ½ large onion, diced
  • 1 red bell pepper, diced
  • 1 cup salsa (your favorite, low-sodium)
  • 1 lime, juiced
  • 2 Tbs. red pepper flakes
  • 1 tsp. cayenne pepper
  • sea salt and black pepper to taste
  1. Combine all ingredients except chicken in a crockpot. Mix well. Add chicken. Cook on low for
  2. about 7-8 hours.
  3. When done, shred chicken in the crockpot using a fork and knife. Mix well before serving. Enjoy!
