- 4 4-oz. chicken breasts, skinless and boneless
- 4 large tomatoes, diced
- ½ large onion, diced
- 1 red bell pepper, diced
- 1 cup salsa (your favorite, low-sodium)
- 1 lime, juiced
- 2 Tbs. red pepper flakes
- 1 tsp. cayenne pepper
- sea salt and black pepper to taste
- Combine all ingredients except chicken in a crockpot. Mix well. Add chicken. Cook on low for
- about 7-8 hours.
- When done, shred chicken in the crockpot using a fork and knife. Mix well before serving. Enjoy!
